Too Hot to Cook

It is so hot outside it's hard to move. So naturally we're craving lighter foods and especially lighter desserts, and those which need no heat are perfect.

If you can crush cookies and mix the crumbs with butter, you've got a crumb pie crust you can fill with ice cream and just about anything sweet, from chopped candy to fudge ice cream topping. Make Lemon Icebox Dessert but don't melt the butter; you can mix the crumbs with softened butter and it will work just fine. Or try Neopolitan Ice Cream Squares and use a jar of gourmet fudge ice cream topping instead of the homemade sauce. In fact, use two jars of the topping! Use your imagination and you can beat the heat with cool summer treats. After all, the sweet tooth is impervious to heat.
