A Simple Christmas Butter Cookie

These delicious little cookies are so easy to make.


For a classic cookie that melts in your mouth, these wonderful little gems are perfect. They are easy to make and only have five ingredients! You can form the dough around just about anything, from whole pecans to unwrapped chocolate kisses. Just make sure that the added treat is completely covered with the dough.

Please only use butter for these little cookies. Margarine just won't provide the same flavor. After all, you only make them once a year - make them the best!

These cookies have the best texture if you reduce the flour amount by a couple of tablespoons and chill the dough before baking. It's also easier to work with the dough using this method.

Swedish Tea Cakes

  • 1 cup butter, softened
  • 1/4 cup sugar
  • 1/4 cup powdered sugar
  • 1-1/2 teaspoons vanilla
  • 2-1/2 cups flour
  • 1/4 teaspoon salt
  • More powdered sugar

In large mixing bowl, beat butter until soft and fluffy. Add both kinds of sugar and beat well. Then beat in vanilla. Add flour and salt and mix just until a dough forms. Cover dough and chill for 2-24 hours in the fridge.

When ready to bake, preheat oven to 400 degrees F. Form dough into 1" balls (stuff with pecans, raisins, or chocolate at this point). Place on ungreased cookie sheet and bake for 8-13 minutes or until cookies are just set and very light brown on the bottom. (Insulated baking sheets are perfect for this cookie.) Place about a cup of powdered sugar in a shallow bowl. When cookies are done, immediately drop into the powdered sugar and roll to coat. Place on wire rack to cool. When cookies are completely cool, roll in powdered sugar to coat again.

You can vary the powdered sugar mixture. Add about a teaspoon of cinnamon, or stir in 2 tablespoons of cocoa powder. Sugar sprinkles are also a nice touch. Makes about 36 cookies.
