Summer Desserts

Summer is made for ice cream and other cool desserts. If you know how to crush some cookies and can melt butter, you can make a fabulous dessert every day this summer!

For a crumb crust that you can fill with any flavor of ice cream, toppings, candies, and fruits, mix 1-1/2 cups of crushed cookies, graham crackers, or pretzels with 1/3 cup melted butter until the crumbs are coated. Press into the bottom and up the sides of a 9" pie plate and freeze for 20 minutes. (You can also make Cookie Pie Crust instead of the crumb crust if you'd like.) Meanwhile, let the ice cream stand out of the freezer for 20 minutes to soften. Then scoop the ice cream into the crumb crust, layering with ice cream toppings and other goodies. Browse through your grocer's freezer and candy sections to get more ideas.

You can also make a crumb crust in a 13x9" pan to serve a crowd. Use 2-1/2 cups of the crumbs with 1/2 cup melted butter and press in the bottom of the pan. Fill with ice cream, etc., as directed above.
