Essential Equipment

Every kitchen is different, and each cook has different tastes. Even so, there are some basic utensils (small items, not appliances) that everyone should have on hand. In my kitchen, I rely on:

  • Three sets of stainless steel measuring cups
  • Three sets of stainless steel measuring spoons
  • Two Pyrex measuring cups: one 2-cup, one 4-cup
  • Four wire whisks
  • Three wooden spoons
  • A pastry blender
  • Six mixing spoons
  • Two slotted spoons
  • A nut chopper
  • Three sets of graduated mixing bowls
  • A set of graduated size sieves
  • A set of sharp steel knives, including a bread knife
  • Three metal spatulas of different sizes, including an offset spatula for frosting
  • Three rubber spatulas
  • Four kitchen mitts
  • Rolling pin
  • Cookie cutters
  • Candy thermometer

I specify these numbers of each utensil because you can bake a few things without having to stop and clean spoons and measuring cups, making the entire process much easier and faster.

In the months to come I'll list more of the equipment I love to use, including pots and pans and appliances like mixers.
