Veggie quiche with garlic, onions, peppers, tomatoes, mushrooms, cheddar, cream, eggs & fresh herbs in flaky pie crust. Vary the veggies & invent a new vegetarian quiche!

Quiche for Easter Brunch - Quiche is the ideal "brunch fare". It's a long standing tradition for many families to include quiche as part of their Easter brunch. Consisting of eggs, cream, veggies and sometimes bacon or ham, quiche is like the ultimate omelette, all dressed up in a pastry shell. Do quiche freeze well? Absolutely! Quick & easy quiche on the day of the brunch. Just thaw, heat and serve!

Vegetarian Quiche Recipe

  • 1) unbaked 10" deep dish Best Ever Pie Crust, crimped and fluted a little higher than the pan.
  • 1 1/2 cups shredded Swiss cheese, or a combination of cheeses like cheddar, Parmesan, monterey jack, etc
  • 1/4 cup onions, diced small
  • 1/4 cup red peppers, diced small
  • 1 teaspoon minced garlic
  • 1 cup veggies - any combination of sauteed, grilled or raw mushrooms, asparagus, tomatoes, broccoli, spinach, etc
  • 5 large eggs
  • 2 1/2 cups half & half, heavy cream or light cream
  • 1 teaspoon salt, more or less to taste
  • 1/4 teaspoon nutmeg, ground
  • 2 Tablespoons fresh or dehydrated dill, or any other desired herb, minced fine
  • Mrs. Dash salt-free seasoning or season to taste

How To Make a Vegetarian Quiche

  1. Make the pie crust according to The Best Ever Pie Crust recipe. Preheat oven to 350 degrees F.
  2. Saute onion, red peppers and garlic together.
  3. Saute or cook any of the veggies that would need pre-cooking.
  4. Spread the cheeses over the bottom of the unbaked crust, then the onions, red peppers and garlic on top of the cheeses. Add any other veggies (mushrooms, asparagus, tomatoes, broccoli, spinach, etc), and layer them on top of the onions and red pepper.
  5. Combine eggs, half & half or cream, salt, nutmeg and one Tablespoon dill together until mixed well in a mixing bowl, using a hand-held mixer or balloon whisk. This can also be mixed in a high-speed stand mixer with the whip attachment until slightly frothy.
  6. Pour cream and egg mixture over onions and veggies, being very careful not to disturb the fillings. This would be the time to arrange the asparagus spears in a decorative pattern.
  7. Sprinkle the rest of the dill and some Mrs. Dash over the top.
  8. Place the quiche very carefully on a baking sheet, and bake at 350 degrees F. for 45 -60 minutes, or until knife comes out clean.
  9. Cool 15 minutes before slicing.
  10. Cool completely before wrapping and refrigerating any leftovers.
  11. Serves 8.

Quiche Recipe Variations

Mini Quiche for Brunch - Roll out small discs of pie crust and line muffin pans, or mini tart pans with the crust, overlapping and crimping to fit. Fill the pie crust cups with desired fillings (veggies, bacon, ham, cheeses, etc). Pour egg and cream mixture over the fillings, and bake in 350 degree oven for 25-30 minutes or until knife comes out clean.

Classic Quiche Lorraine - Substitute cooked and crumbled bacon for the veggies, sprinkle over the onions and garlic, and follow the directions above.
