Easter Tiramisu with Strawberries and Mascarpone

This delicious sweet tiramisu flavored with Amaretto sweet syrup is layered with Mascarpone cream, fresh sliced strawberries and topped with almonds and crushed amaretti.

This is a wonderful dessert to serve for Easter or any special holiday. It also makes the perfect summer dessert especially when strawberries are in season.

Strawberry Mascarpone Cream Tiramisu Recipe

The steps for making this tiramisu are listed in order.

Sponge Cake

Ingredients:

  • 3 large eggs
  • 1 cup sugar
  • 5 tbsp water
  • 1 tsp almond extract
  • 1 1/3 cup sifted cake flour or
  • 1 cup sifted all purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt

How to Make the Sponge Cake:

Heat oven to 375 degrees.

  1. Line a 15 x 10 x 1-inch with parchment paper and spray with cooking spray.
  2. Beat eggs in a small bowl with electric mixer until very thick and fluffy for 5 minutes at high speed.
  3. Add sugar gradually and beat very well after each addition. Turn mixer speed to low and beat in water and almond extract.
  4. Sift the flour before measuring, then spoon it lightly into a dry measuring cup and level it off with the back of a knife.
  5. Sift measured flour, baking powder and add to egg mixture.
  6. Beat on low speed until smooth, scraping down the sides of the bowl often.
  7. Pour into prepared pan and spread evenly with a rubber scraper.
  8. Bake for12 to 15 minutes or until top springs back when touched lightly in the centre.
  9. Remove cake from oven and loosen cake around the edges.
  10. Place a clean tea towel over a large cake rack and invert the rack and towel on top of the cake. Turn the cake, towel and rack back over and carefully lift the pan off the cake. Strip the paper off the cake. Let cool.
  11. Position cake horizontally and cut into three equal sections.

Amaretto Flavored Sweet Syrup

Ingredients:

  • 2 cups water
  • 1 cup sugar
  • 1 sliced lemon
  • 1/4 cup Amaretto liquor

How to Make the Amaretto Flavored Sweet Syrup:

  1. Place all ingredients except the Amaretto in a medium sauce pan. Stir to mix.
  2. Let the mixture boil until liquid is reduced to a syrup consistency.
  3. Strain into a heat proof bowl.
  4. Add Amaretto to syrup mixture.
  5. Cool syrup cool completely

Mascarpone Cream Filling

Ingredients:

  • 1 cup whipped heavy cream
  • 1 cup mascarpone cheese
  • ¼ cup sugar
  • 1 tsp almond extract

How to make the Mascarpone Cream:

  1. In bowl of stand up mixer with paddle attachment mix the mascarpone filling, the sugar and almond extract until light and fluffy.
  2. Fold in the whipped heavy cream.

How to Assemble the Strawberry Mascarpone Cream Tiramisu:

Ingredients:

  • 3 sponge cake sections
  • Amaretto Sweet Syrup
  • Mascarpone Cream
  • 2 cups sliced fresh strawberries
  • 1 cup toasted sliced almonds
  • 20 crushed amaretti cookies (Italian almond cookies)
  • powdered sugar

Assemble the Strawberry Mascarpone Cream Tiramisu:

  1. Place the first section of the sponge cake on a serving plate.
  2. Prick holes in cake with a fork and brush cake with 1/3 of the Amaretto sweet syrup.
  3. Spread 1/3 of the Mascarpone cream over cake.
  4. Spread 1 cup of sliced strawberries over the Mascarpone cream.
  5. Place the second section of the sponge cake over the sliced strawberries.
  6. Repeat steps #2 through #4.
  7. Place last section of the sponge cake over the sliced strawberries.
  8. Repeat steps #2 and #3.
  9. Sprinkle the toasted almonds and crushed amaretti cookies evenly over top of cake.
  10. Sprinkle with powdered sugar.
  11. Refrigerate cake for at least 1 hour.
