These easy no bake bars are a kid's favorite. Peanut butter and chocolate - what's not to like?

No bake bars are a great treat in the summer. They're so easy to make and don't heat up your kitchen. In fact, give the ingredients and recipe to your kids and solve the 'Mom, what can I doooo?' problem on rainy days.

To make the vanilla wafer cookies into crumbs, I like to place a couple of handfuls into a heavy duty ziplock bag, seal the bag closed, then pound it with a rolling pin. When the cookies are starting to crush, roll over the bag with the rolling pin until crumbs are fine.

You can add lots of goodies to these bar cookies. Chop up some peanut butter cups and stir them in, add M&Ms candies or Reese's Pieces; add chopped honey roasted peanuts, or chocolate chips. If there's a 'discussion' about what to add, just divide the bar mixture in half, add the goodies to each half, and press the mixture into 8x8" square pans.

Peanut Butter Cup Bars

  • 3/4 cup butter
  • 1 cup creamy or crunchy peanut butter
  • 2 cups vanilla wafer cookie crumbs
  • 2 cups sifted powdered sugar
  • 1 (11 ounce) package milk chocolate chips

Line a 13x9" baking pan with foil and set aside. In a large saucepan, melt butter with peanut butter over medium low heat. Remove from heat and stir in cookie crumbs and powdered sugar until well mixed. Press mixture into prepared pan.

In medium microwave safe bowl, place chocolate chips. Microwave on 50% power for 1 minute, remove and stir. Return to microwave and heat on 50% power for 1 minute longer, then remove and stir until chips are melted and mixture is smooth. Pour over bars and smooth evenly. Let stand until chocolate is firm, then cut into bars. Makes 4 dozen bar cookies
