These delicious no bake bar cookies with the strange name are the lastest addition to my recipe box.
Nanaimo bars are a layered no-bake cookie that, according to Wikipedia, were invented in the Canadian city of the same name. However they came into being, they are delicious! The official recipe for Nanaimo Bars is on the Nanaimo, Canada web site. The following is my version of the recipe; I decided to highlight the milk chocolate frosting by making the crust and filling butterscotch flavor. This recipe may be inauthentic, but it is delicious! Enjoy these easy bar cookies this holiday weekend! Butterscotch Nanaimo Bars
In heavy saucepan, combine 1/2 cup butter, brown sugar, and egg over medium heat. Cook and stir until mixture boils and becomes smooth and thick. Remove from heat and stir in graham cracker crumbs and walnuts. Press into the bottom of an 8" square pan. In medium bowl, combine 1/2 cup softened butter with cream, maple syrup, and pudding mix and beat until smooth. Stir in powdered sugar. Spoon and spread mixture over crumb layer. In microwave safe bowl, place milk chocolate chips. Heat on 50% power for 1 minute, then remove and stir. Repeat heating and stirring until chocolate is melted and smooth. Pour over pudding layer and gently spread to cover. Chill until firm, then cut into bars. Baking and Desserts Recipe Box
