2 Warm Desserts Filled with Maple for Cool Fall Weather

Maple gingerbread cookies and apple gingerbread cake are 2 sweet desserts to be enjoyed on a cool, fall evening. Ginger is commonly used in baked desserts.

The fall season provides a wide arrange of tasty desserts which can be enjoyed in the late afternoon or evening. For instance, ginger is a commonly used in cakes, cookies, and pies because of its spicy flavor.

Maple syrup can be added to desserts for its sweetness.

Maple Gingerbread Cookies

Preparation and Cooking Time: 20 minutes

Serves: 24

Ingredients:

  • 3 cups whole-wheat flour
  • 2 tsps. baking soda
  • 1 tsp. baking powder
  • 2 tsps. ground ginger
  • 1 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 1 cup applesauce
  • 1 Tsp. water
  • 1/4 cup maple syrup
  • 1 large egg
  • 1/4 cup macadamia nuts

Directions:

  1. Preheat oven to 350 degrees F. Sift together the flour, baking soda, baking powder, ginger, cinnamon, and salt. Set aside.
  2. Use a large bowl to blend applesauce, water, maple syrup, egg, and nuts. Gradually stir the sifted ingredients into the blended mixture. Gently place dough into small balls, roll them out, and cut them into desired shapes using a cookie cutter.
  3. Use an ungreased cookie sheet to place the cookies 2 inches apart and flatten slightly.
  4. Bake for 9 to 11 minutes in the preheated oven.
  5. Allow cookies to cool on baking sheet for 4 to 6 minutes. Remove and place on a plate.

Suggested Servings

  • Serve the cookies with a cup of hot tea with a slice of lemon and 1 tsp. of maple syrup added.
  • Top with a small scoop of ice cream for a cool flavor while the gingerbread cookies are slightly warm.

Apple Gingerbread Cake

Preparation and Cooking Time: 1.15 hours

Serve: 10-12

Ingredients:

  • 2 cups all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. ground ginger
  • 1 tsp. ground cardamom
  • 1 tsp. salt
  • 1/2 cup brown sugar
  • 1/2 cup molasses
  • 1/2 cup unsalted butter
  • 1 large egg
  • 1 cup warm water
  • 2 cups apples, sliced

Directions:

  1. Preheat oven to 350 degrees F. Grease and flour a 9 inch round pan.
  2. In a medium bowl, sift together the flour, baking soda, ginger, cardamom, and salt. Set aside.
  3. In a large bowl, blend together the sugar and butter. Add the sifted mixture and stir in the warm water along with the sliced apples.
  4. Pour into the greased pan evenly.
  5. Bake for 55-65 minutes in the preheated oven until a toothpick or fork can be placed in the center and comes out clean.
  6. Allow to cool for 15 minutes before applying icing or serving plain on a plate.

Suggested Servings:

  • Serve with a spoonful of whipped cream for a cool flavor.
  • For a crunchy flavor, add 1/4 cups of peanuts before cooking. Otherwise, sprinkle with peanuts after the cake has been baked and any icing has been applied.
  • Serve with a glass of warm rice milk for those individuals with a lactose intolerance.
