Cheesecake is a rich, creamy cake that can be tricky to make. A good cheesecake is easy if one follows this recipe.
There are many varieties of cheesecake. The following is a recipe for a plain cake. Different varieties can be made following this basic recipe. Toppings can be placed after the cake has cooled and flavors can be added to one’s liking during the mixing process, prior to baking. The Ingredients
The RecipePreheat the oven to 350 degrees Fahrenheit. In a food processor granulate the graham crackers to the equivalent of one cup of crumbs. Melt the butter in a pan, remove from the heat and mix the crumbs with it in a bowl to make a coarse meal. Press this mixture into the bottom of a nine inch spring form pan uniformly, bake for ten minutes and remove the pan from the oven, keeping it on. In a bowl place the cream cheese, sugar, flour, vanilla and any other flavoring desired. With an electric mixer, blend everything well. Add the eggs one at a time until they are well incorporated into the mixture. Fold in the sour cream and pour the mixture over the crust and bake at the preset 350 degree temperature for sixty-five and seventy or until the center is almost set. Remove the pan from the oven and run the knife around the rim. Refrigerate for a minimum of four hours or preferably overnight. Before serving a topping can be applied to the top of the cake. Low fat and Nonfat VersionsTo decrease the fat one can substitute low-fat or non-fat cream cheeses in place of the regular cream cheese. One can also omit the sour cream if desired. Just note that any substitution will decrease the richness and flavor of this cake. VarietiesThe following are ways to change and transform a plain cheesecake into a flavored cheesecake. To make a lemon cheesecake one needs to add two tablespoons of chopped lemon zest and two tablespoons of lemon juice during the mixing phase. For an orange-flavored cheesecake two tablespoons of freshly squeezed orange juice and 2 tablespoons of orange zest can be added. Chocolate cheesecakes can be made by incorporating a half cup of melted dark chocolate to the cream cheese mixture while one is mixing the ingredients. These are only a few examples. Any combination can be made depending upon a person's taste and imagination.
