This Halloween cookie cake is a quick and easy, and it looks as good as one bought in the mall or in the store.

Although some would say the cookie cake is not an elegant dessert, it is loved by most and only on rare occasions is there any left for the baker to take home after a get together or party.

This cookie cake is also a fairly quick dessert to make and takes no longer to cook than a batch of chocolate chip cookies. And with a good frosting, which consists of 5 ingredients and takes 5 minutes to mix, the cookie cake will look like it was professionally made.

Making the Cookie

There are several recipes out there for making chocolate chip cookies, but using a favorite recipe will yield the best results. The cookie cake in the picture was made by using the Toll House chocolate chip cookie recipe but other recipes use slightly different ingredients and finding the right one may depend on what is in the kitchen pantry, unless a grocery store run is already on the agenda.

For instance, the Neiman Marcus recipe has a few different ingredients than the Toll House Cookies and bakes a little longer at a lower temperature.

The ingredients and directions for Neiman Marcus cookies are as follows:

Ingredients

  • 1/2 cup butter, softened
  • 1 cup light brown sugar
  • 3 tablespoons granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 3/4 cup flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoon instant expresso coffee powder
  • 1 1/2 cup semi-sweet chocolate chips

  1. Preheat oven to 300 degrees F.
  2. Cream 1/2 cup of softened butter, 1 cup of light brown sugar and 3 tablespoons of granulated sugar.
  3. Add 1 large egg and 2 teaspoons of vanilla. Mix.
  4. Combined 1 3/4 cups of flour, 1/2 teaspoon of baking powder, 1/2 teaspoon of baking soda and 1/2 teaspoon of salt and then mix it into the butter mixture.
  5. Stir in 1 1/2 teaspoon of instant expresso coffee powder and 1 1/2 cups of semi-sweet chocolate chips.
  6. Because this recipe yields 2 dozen cookies, the batch will need to be doubled in order to have enough dough for a cookie cake.
  7. Wash hands and then press the dough into a pizza pan. If dough is sticky put flour on fingers before pressing the dough.
  8. Bake cookie for approximately 20 minutes or until golden brown.
  9. Let cookie cool.
Decorating the Cookie Cake

This part can be as simple as a border and words or as elaborate as an entire Halloween scene.

For the border, make two different colors of frosting. Buttercream icing works well for this project and is easy to make. With an open star decorating tip, pipe stars around the cookie using one color at a time and leave a space between each star to insert the other color.

Next write the words desired with a round decorating tip. Use this tip to draw a picture if desired. For the cat, make a circle for the head with two triangles on top. Under the circle add an oval and then a smaller and thinner oval on each side for the legs with a fat circle on the bottom of the little ovals for the feet. Add a tail to finish the black cat. Other ideas include adding a moon in the top right hand corner or have the cat sit on a fence.

A cookie cake can add the little something to most parties. Kids and adults will love eating it and the baker will love the easy of making it.
