There are few people who dislike a giant cookie covered with frosting and this easy dessert is great for parties, cake walks or for staying home with the family.
A giant Jack-O-Lantern cookie is a perfect dessert for just about any party. It is easy to make, transport and serve. And in many cases this dessert can be served with simply a napkin, no plates or utensils needed.
The steps to making a cookie cake are simple and bake time is no longer than a regular batch of cookies.
Making the Cookie Cake
There are several recipes to make chocolate chip cookies. The one used for the picture was the Toll House chocolate chip cookie recipe found on the back of the package, but the ingredients were mixed in a slightly different order.
Ingredients
1 cup Crisco
3/4 cup sugar
3/4 cup brown sugar
2 eggs
1 teaspoon vanilla extract
2 1/4 cup all purpose flour
1 teaspoon baking soda
1 teaspoon salt
12 ounce bag of semi-sweet morsels
Preheat the oven to 375 degrees F.
Cream 1 cup of Crisco, 3/4 cup of sugar, 3/4 cup of brown sugar and 2 eggs.
Add 1 teaspoon of vanilla and mix.
Next add 1 cup of flour, 1 teaspoon of baking soda, 1 teaspoon of salt and mix into mixture.
After all is mixed well, add 1 1/4 cup flour.
Stir in half of a 12 ounce bag of semi-sweet or milk chocolate morsels. If an entire bag is used, the cookie could have more difficulty staying together after it is removed from the baking pan.
Wash hands and then spread the cookie dough into a pizza pan. The dough does not have to go all the way to the edge because as it bakes it will expand. There will also be some dough left over to make about a dozen cookies.
Bake the cookies for 8 to 10 minutes or until golden brown.
Let cool about 10 minutes before removing it from the pan. One way to remove it is to loosen around the outside of the cake with a butter knife and then take a cookie sheet and place it on top of the cookie cake. Then while holding both pans, turn them over and tap on the pizza pan to loosen the cookie. Slowly remove the pizza pan.
Cover a piece of cardboard larger than the cake with wax paper or foil. This will serve as the platter for the cake and can be thrown away afterward. Place the cardboard top down on top of the cake and flip the cookie over in the same fashion as before.
After the cookie cake is completely cool, begin decorating it.
Making the Jack-O-Lantern
Cover the entire cookie cake with orange buttercream icing. Using a piece of paper, make a stencil by cutting out the face of a Jack-O-Lantern. Have someone hold the paper as close to the cookie without touching the frosting and another person will sprinkle chocolate sprinkles in the holes for the eyes and mouth. Add a strip of sprinkles at the top for the stem.
This delicious cookie cake is a great project to do with kids and is perfect for any Halloween occasion.
