Take advantage of fresh summer fruits, packaged mixes and a little creativity to create a beautiful summer dessert.
With summer comes invitations to picnics, cookouts and various parties. The last thing you want to do is to spend your time preparing a complicated dessert. These recipes will get you in and out of the kitchen fast, but will wow the guests at any party. Berry Trifle – Summer is a time of fresh fruit and berries. You can dress up a store bought pound cake with a few simple ingredients and fresh berries. Ingredients: 2 frozen pound cakes like Sara Lee 6 Cups fresh berries 2 large packages instant pudding prepared according to package directions or 2 large containers of whipped topping Directions: Thaw pound cakes and cut into approximately one inch cubes. In a clear glass bowl layer one-third of cake cubes, add one-third of whipped topping or pudding and top with one-third of berries. Repeat layers finishing with berries. Refrigerate until ready to serve. Make sure each layer can be seen through the glass bowl for an elegant but easy dessert. If desired, a liqueur can be splashed over the cake cubes. Light lemon bars – These bars are quickly made with lemon pie filling, or the pie filling of your choice. Ingredients: 1 box of one step angel food cake mix – If the directions say anything other than add water and mix it is not right for this recipe 1 21 ounce can lemon pie filling, or the flavor of your choice. Directions: Preheat oven to 350 degrees. Mix together pie filling and cake mix (no water) until well blended. Spread batter into a 9 x 13 inch cake pan sprayed with non-stick cooking spray. Bake for 30 minutes or until cake springs back when touched. Sprinkle with powdered sugar if desired. Star or flower brownies – A package of brownie mix and a cookie cutter can make easy brownies look festive. Ingredients: 1 family size package of brownie mix and ingredients listed on package Cookie cutters Prepare brownie mix according to package directions. Let cool about 15 minutes in the pan, then invert onto a cutting board and let cool completely. Use your cookie cutter to cut shapes from the prepared brownies. To prevent brownies from sticking to the cookie cutter, dip it into flour or baking cocoa. Choose cookie cutters to match the theme of your party and your dessert will be a hit. Ice cream buffet – What’s better in summer than ice cream? For a no fuss dessert set up an ice cream buffet. Ingredients: Ice cream Toppings Purchase a few flavors of good quality ice cream. Fancy flavors are not necessary since you will be setting up a topping buffet as well. Provide both bowls and cones for guests. Your toppings can be as varied as your guests. Chocolate is a must any ice cream buffet. Fresh berries, chopped candy bars, chocolate chips, whipped cream, jimmies, caramel, brownies, cookies, and nuts will be welcome by your guests. Don’t forget cherries to top off your creation. Put the toppings in decorative bowls to give your buffet an elegant look. Desserts don’t have to be complicated to be decadent and tasty. Your guests will never know or care that you didn’t spend hours slaving in the kitchen.
