Easy, fun, delicious and loved by everyone. Strawberry cupcakes! This easy recipe is one you will make over and over. Great for all ages and all occasions.

Strawberry cupcakes are a mouth watering treat that can be made for parties, the holidays or just for a yummy snack. They are a breeze to make and taste so delicious!

Follow these simple steps and you will be considered the strawberry cupcake queen or king by your family and friends.

Ingredients

  • 1 cup white sugar
  • 1/2 cup butter
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk
  • 1 small package frozen strawberries thawed and chopped
  • Standard Muffin Pan, Baking Cups
  • Strawberry Flavored Icing
  • Sliced Fresh Strawberries

Directions

  1. Heat oven to 350*. All ovens are different so be sure to heat yours to the correct temperature.
  2. Cream together the sugar and butter.
  3. Beat in eggs one at a time then stir in vanilla.
  4. Combine flour and baking powder.
  5. Add the combined flour and baking powder to the creamed mixture and mix well.
  6. Stir in milk until batter is smooth.
  7. Finally, mix in thawed chopped strawberries.
  8. Fill muffin cups 3/4 full. It is best to use an ice cream scoop to measure each cup precisely. If a cup is too full it will overflow and cause a mess. If a cup is filled too low it will not rise to the top and will be difficult to top with icing.
  9. Bake for 20 minutes. As stated before, ovens bake at different temperatures. After 15 minutes check to see if cupcakes are ready by sticking a toothpick in the middle of one. If the toothpick comes out clean they are ready.
  10. Cool cupcakes in pan. Cupcakes must be completely cooled before topping with icing.
  11. Top cupcakes generously with the strawberry icing. For even more strawberry flavor you can add additional thawed frozen strawberries to the icing.
  12. Fan out about three slices of fresh strawberries on top of each cupcake.

Tips and Ideas

  • Place each strawberry cupcake on top of an ice cream cone to add whimsy.
  • This recipe can also be made into a sheet cake. You can then cut out any shape pieces you would like such as hearts, flowers ect.
  • Stack cupcakes onto a cupcake tree and tie colored ribbons around the base of each stand. This is a great idea to do at a baby shower. Blue ribbons for a boy and pink for a girl.
  • For a little girls birthday party stick a Strawberry Shortcake ring on top of each one. This can be one of the party favors for a Strawberry Shortcake themed party.
  • For any party or get together use the cupcakes as place settings by sticking a name labeled toothpick flag in the center of each cupcake. To make the toothpick flag get small thin strip labels and fold over tip of a toothpick. Right the name on the label.

I loved this recipe the first time I made it. I live in Costa Rica and we do not have frozen strawberries in our supermarkets, but an abundant of fresh ones. So naturally I subsituted the fresh for the frozen. They came out light and delicious. Thats what I like; easy recipes with ingredients available here. Thanks ever so much.
