Shamrocks, leprechauns, parades and parties-however you choose to celebrate March 17, there's almost always great (and sometimes green) Irish food involved.

Make your St. Patrick’s Day a memorable celebration with these easy and fun desserts.

A Leprechaun's Favorite Dessert

Just three ingredients!

Directions:

  1. Soften ice cream, leaving out at room temperature for a few minutes.
  2. Crumble ¾ of cookies into bottom of 9x12 cake pan crumble.
  3. Spoon ice cream over top of crumbles.
  4. Arrange remaining cookies along side of pan and drizzle chocolate syrup on top.
  5. Put back in freezer for about ½ hour before serving. Makes 12 or 15 servings

Irish Apple Cake

Preheat oven to 350° F.

  1. Grease an 8-inch pan.
  2. Sift together flour, salt, and ground cloves into a large bowl. Cut in butter until the mixture has the consistency of fine crumbs. Little fingers work well here too.
  3. Peel and core apples, then slice into medium thickness slices. Add apples and sugar to flour mixture. Stir in the eggs and enough milk to leave the dough stiff. Turn the dough into the prepared pan. Sprinkle with the remaining sugar.
  4. Bake 45 minutes until crisp and golden in color.
  5. This Irish dessert recipe is delicious served either warm or cold. Top with whipped cream if desired

Super Easy Irish Scones

Great for little ones to help, fun to smoosh with fingers.

Directions:

  1. In a large bowl, combine flour and butter until crumbly (use fingers or two butter knives to mix). Add baking powder, sugar and salt.
  2. Mix milk and egg together in separate bowl and blend into larger bowl of dry ingredients.
  3. Add in dried fruit or nuts if desired.
  4. Turn out onto floured surface and pat or roll to one inch thickness.
  5. Cut dough into 2 inch circles with a cookie cutter or a drinking glass.
  6. Place on cookie sheet, either greased or with parchment paper, about one inch apart and bake at 425 degrees Fahrenheit for 15 minutes.

Lucky Shamrock Cake

Directions:

  1. Prepare cake mix according to directions, adding in pudding mix and several drops of green food coloring.
  2. Grease cake and loaf pans with shortening. Dust the bottom with flour. Divide batter evenly between pans. Use 3 or 4 heart pans, depending on how many leaves in your clover (You can also use round pans and just cut out shape of heart/clover leaf).
  3. Bake according to directions and allow to cool.
  4. Assemble the hearts into the shape of the shamrock on a serving dish and add the mini loaf cake for the stem. Add several drops of food coloring to the frosting. For a minty flavor, you can add the peppermint extract.
