These cute little tartlets are made from just five ingredients!
Just saying the word 'tartlet' makes me think of Jon Lovitz's guest appearance on Friends. Monica was serving him some tiny appetizer tartlets, and Mr. Lovitz's character, quite obviously not sane, keeps repeating 'tartlets; tartlets; the word has lost all meaning.'
Tartlets are little tarts. They are perfect for the quick dessert, especially if you buy those tiny individual premade graham cracker shells. You can also vary the flavor; use frozen peaches or strawberries in place of the raspberries, use plain cream cheese with melted chocolate, or use chocolate syrup instead of fruit.
In medium bowl, combine cream cheese, raspberries, powdered sugar, and mint extract; beat until blended. Fold in whipped topping. Spoon mixture into the tartlet shells and chill for 2-3 hours until firm. Garnish with fresh raspberries and more whipped topping. Serves 6
