Strawberry Filled Homemade Shortcakes are Scrumptious!

Make your own shortcakes and fill them with a wonderful strawberry topping.

Homemade Strawberry Filled Shortcakes

The strawberries are in the middle, as well as on the top,of these delicious strawberry shortcakes. The perfect summer dessert. They also are very nice for tea time or a little girls' party.

Directions:

  1. Preheat your oven to 375*. Spray a large baking sheet with non stick spray.
  2. In a large mixing bowl whisk together the flour, sugar, salt, baking powder and baking soda called for in the shortcake ingredients. Cut in the butter with a fork or pastry blender until there are large crumb size pieces throughout. Next mix together the buttermilk and egg in a separate bowl. Add this to you flour mixture and mix until a dough forms.
  3. Spread a small amount of flour on your work surface, Place dough on surface and knead to form a smooth ball. Pat out dough 3/4 thick. Cut out 8 circles using a biscuit cutter or round cookie cutter, Use want shortcakes approximately 2 - 3 inches round.
  4. Cut and X on top of each shortcake with a floured knife. Separate the edges of the X a bit and spoon in a round teaspoon of strawberry jam or preserves. Press edges back together to seal close. Pinch edges shut if needed.
  5. Bake 15 - 18 minutes or until lightly browned. Remove from oven and allow to cool.
  6. While shortcakes are baking mix up your topping. Stir together the strawberries and 1/4 cup sugar. let theses stand for 20 minutes. In a another bowl beat cream, 2 tablespoons of the powdered sugar and vanilla on medium- high speed. Beat until soft peaks are formed.
  7. Place 1 shortcake on each dessert plate. Sprinkle with powdered sugar that is left. Put a heaping spoonful of strawberries on top of each shortcake. Top with whipped cream. Garnish with a strawberry slice if desired.

Try this with peaches and peach preserves, blueberries and blueberry preserves or any fruit you enjoy. Why not put strawberry jam in the middle and peaches on top? Let your imagination run wild!
