Apples, cinnamon, walnuts, cream cheese, applesauce and honey are some of the ingredients in these recipes. An apple a day still makes good sense any way you slice it!
An apple a day could help keep your memory sharp as a knife. Quercetin, an antioxidant found mainly in the skin of the apple has proven more effective than Vitamin C at protecting brain cells from oxidative damage. Apples contain boron, a mineral that helps protect against heart disease. They are a good source of Folic acid, a B vitamin that helps prevent serious birth defects as well as heart disease.
A medium apple supplies four grams of fiber, mostly pectin, which is also known for its ability to lower cholesterol. Women who eat at least one apple a day are 28% less likely to develop type 2 diabetes than those who don't eat apples. If you don't like eating raw apples, at least enjoy them in baked recipes. Here are a few delicious choices.
Crockpot Chunky Applesauce
Ingredients:
10-12 apples (use different kinds of apples for more intense flavor)
lemon juice of one half lemon
1/2 cup water
1/4 cup brown sugar
2 tsp vanilla extract
1 tsp cinnamon
1/4 cup raisins (optional)
Substitute two apples for 2 pears for a spicier flavor (optional)
Directions:
Peel and core apples (use Granny Smith and Gala apples)
Cut apples in chunks, douse with lemon juice.
Add to crockpot with water. Add sugar, vanilla, raisins.
Cover and cook on low for 8-10 hours.
Stir lightly for a chunky sauce.
Add cinnamon at end of cooking. Serve warm.
Makes 2-1/2 cups
Chunky Apple Cake with Raisins and Nuts
Ingredients:
1/2 cup plus 2 Tbsp butter, melted
2 cups sugar
2 large eggs
1 tsp vanilla extract
2 Tbsp warm water
2 cups all-purpose flour
1 tsp baking soda
1 tsp salt
2 tsp ground cinnamon
4 Granny Smith apples, peeled and sliced
1 cup chopped walnuts, toasted
Directions:
Stir together butter, sugar, eggs, and vanilla extract till blended.
Combine flour, soda, salt and cinnamon. Add to butter mixture, stirring till blended.
Stir in apple slices and walnuts. Spread into a greased 13 x 9-inch pan.
Bake at 350° for 45 mins or until a toothpick comes out of center clean.
Cool completely in pan on wire rack. Add cream cheese frosting, sprinkle walnuts on top.
Cream Cheese Frosting
Ingredients:
1 8 oz pkg cream cheese, softened
3 Tbsp butter, softened
1-1/2 cups powdered sugar
1/8 tsp salt
1 tsp vanilla extract
Directions:
Beat cream cheese and butter at medium speed till creamy.
Gradually add in sugar and salt, beating till blended.
Stir in vanilla extract.
Spread evenly over cooled cake.
Drop walnuts over frosting if desired.
Apple Pie Waffles
Ingredients:
1-3/4 cups whole wheat flour
1/2 cup wheat bran
1/2 tsp salt
1tsp apple pie spice
3/4 cup water
1 tsp honey
2 tsp active dry yeast
2 medium apples, chopped
3 Tbsp applesauce
1 cup skim milk
2 egg whites
waffle iron
Directions:
Stir together flour, bran, salt and apple pie spice. Set aside.
In another bowl, stir water and honey together. Sprinkle yeast over surface and let stand for several minutes, till dissolved.
Stir in apples, applesauce, milk and egg whites till blended. Stir into dry mixture.
Cover and let sit for 15 mins.
Cook in waffle iron for 6-7 mins. or till steam stops.
Apples are undeniably delicious, fresh and crisp from the tree or cooked in applesauce or cakes and waffles. Adding apples to our diets on a daily basis is necessary and beneficial. Have you had your apple today?
