Which Apples Are Best For Baking?

The Cook's Thesaurus says, "Best (apples) for baking: Rome, Jonagold, Granny Smith, Pippin, Gala, Braeburn, Northern Spy, Gravenstein, Rhode Island Greening, York Imperial, Cortland, Winesap."

How Many Apples Are in a Pound?

3 medium apples = 1 pound

2 1/2 cups sliced apples = 1 pound

2 1/2 - 3 pounds of apples is enough for a large deep dish pie or apple cobbler.

Apple Cobbler Recipe With Fresh Apples

Cobbler Ingredients

  • 6 cups apple slices, peeled and cored
  • 1/2 cup sugar
  • 1/2 cup brown sugar, packed
  • 1/4 cup cornstarch
  • 1/2 teaspoon ground cinnamon

Sweet Biscuit Topping for Apple Cobbler

  • 2 cups unbleached all-purpose flour
  • 1/3 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 stick chilled butter (6 ounces), cut in small pieces
  • 3/4 cup heavy whipping cream
  • 1 large egg, beaten

How To Make an Apple Cobbler

  1. Preheat oven to 375 degrees F.
  2. Butter a 9" X 13" or a two quart casserole or baking dish. Set aside.
  3. In a large bowl, combine apples, 1/2 cup sugar, 1/2 cup brown sugar, cornstarch and cinnamon. Toss together lightly and set aside.
  4. In a medium bowl, combine flour, 1/3 cup sugar, baking powder and salt. Using a pastry blender or two knives, cut in cold butter until the mixture resembles small peas.
  5. Mix heavy cream and egg together and add to the flour mixture. Being careful not to overwork the dough, mix only until it is moistened and comes together in a ball.
  6. Spread apple mixture evenly on the bottom of prepared baking dish.
  7. Place the biscuit dough on a floured surface and working with two hands, pat it into a round circle large enough to cover the casserole dish.
  8. Gently lift the sweet biscuit dough, place on the fruit and smooth into place. Cut a few decorative holes on top for the steam to escape.
  9. Brush a little cream on top and sprinkle with sugar and/or cinnamon if desired.
  10. Bake at 375 degrees for 45 minutes or until sweet biscuit dough topping is light golden brown and juices are bubbling up through the holes.
  11. Remove apple cobbler from the oven and cool between 15-30 minutes, or until ready to serve. Do NOT eat apple cobbler directly from the oven, as the temperature of the fruit is very hot!
  12. Serve with cinnamon whipped cream (recipe follows).
  13. Refrigerate any leftovers.
  14. Serves 8-10.

Cinnamon Whipped Cream Recipe

  • 2 cups cold heavy cream
  • 1/2 cup confectioners' sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract

How To Make Whip Cream

  1. Using a stand mixer or a hand-held mixer with a whisk attachment, whip cream until almost stiff.
  2. Add confectioners' sugar, cinnamon and extract and beat until stiff.
  3. Refrigerate until ready to use.
