Cranberries and apples snuggle together with maple syrup and cinnamon under a crumbly crisp of whole wheat flour, rolled oats, butter and brown sugar. Serve this fall dessert with whip cream!

Using Fresh, Frozen and Dried Cranberries in Apple Crisp

Ocean Spray, a leader in the world of cranberries, produces not only fresh cranberries, but frozen and dried cranberries as well. Known as Craisins, their sweet flavor, much like raisins, are the perfect addition for quick breads, granola, cereal products and cookies, among other treats. The recipe for Apple Cranberry Crisp, uses fresh or frozen cranberries, not dried Craisins.

Apple Cranberry Crisp Recipe

  • 8 large apples, peeled, cored and sliced
  • 2 1/4 cup cranberries, fresh or frozen
  • 1 cup pure Vermont maple syrup
  • 1/4 cup whole wheat pastry flour
  • 1 Tablespoon ground cinnamon
  • 1 1/2 cups rolled or quick oats
  • 3/4 cup date sugar or natural brown sugar
  • 3/4 cup whole wheat pastry flour
  • 1 teaspoon ground cinnamon
  • 3/4 cup (1 1/2 sticks) cold butter, cut in small pieces

How To Make Cranberry Apple Crisp

  1. Preheat oven to 350 degrees F. Spray a 9 X 13 inch baking pan or casserole dish with vegetable spray. Stoneware dishes work great for this dessert too.
  2. In a large bowl, mix apple slices, cranberries, maple syrup, 1/4 cup whole wheat pastry flour and 1 Tablespoon cinnamon together. Spread in prepared pan, and set aside.
  3. Combine rolled oats, date or brown sugar, 3/4 cup whole wheat pastry flour and 1 teaspoon sugar in a large bowl. Using a pastry blender or two knives, cut in cold butter until mixture is crumbly, or it resembles very small peas. This step can also be done in a food processor. Spread evenly over fruit.
  4. Bake at 350 degrees for 45-55 minutes, or until fruit is bubbly and crisp topping is lightly browned.
  5. Let cool slightly before serving. Do not eat right out of the oven. The inside temperature is still too hot.
  6. Serve Apple Cranberry Crisp with whip cream (recipe follows) or vanilla ice cream.
  7. Serves 10-12.

Whipped Cream Recipe

  • 2 cups cold heavy cream
  • 1/2 cup confectioners' sugar
  • 1/2 teaspoon vanilla extract

How To Make Whip Cream

  1. Using a stand mixer or a hand-held mixer with a whisk attachment, whip cream until almost stiff.
  2. Add confectioners' sugar and extract, and beat until stiff.
  3. Refrigerate until ready to use.
