Patriotic cakes and cookies!!

Two fun ideas of bringing patriotism to the kitchen and preparing delicious yummy cakes and cookies. A fun competition idea is thrown in to complete the wild scene.

1). Tricolor choco cup cakes

Ingredients

For cake:

2 cupfuls (about 400g) sugar

¾ cup (about 150g) quality brand cocoa

1 ¾ cupfuls (about 350g) flour

1 ½ teaspoonful baking powder

1 ½ teaspoonful baking soda

1 teaspoonful salt

2 eggs

1 cup (about 200ml) milk

½ cup (about 100g) vegetable oil

2 teaspoonful vanilla extract

1 cup (about 200 ml) boiling water

For vanilla butter cream frosting:

5 tablespoon butter or margarine

4 cupfuls (about 800g) sugar powder

¼ cup (about 50ml) milk

1 tablespoon vanilla extract

Choicest blueberries and strawberries

Method

Cake preparation

Oven should be preheated to 350 F. Prepare 21/2” inch diameter muffin cups lined with paper cups. Stir up a mix of sugar, flour, cocoa, baking powder, baking soda and salt and then add eggs, milk, oil and vanilla, mix for 11/2 minutes in a mixer at medium speed, and finally stir the mix in boiling water to prepare a watery batter.

Pour batter in cups to fill them to 2/3rd of their capacity.

Baking should be allowed until the center wooden pick could be removed cleanly. Usually this takes 20-30 minutes. Take out the preparation from oven and place it on the wired wrack until it cools completely.

Layer the cups with vanilla butter cream frosting. Cover the top layer with garnishing of blueberries and strawberries.

Method

Prepare a cream of sugar powder and butter, then add milk and vanilla extract and beat till the frosting is neither too thin nor too thick, but can be spread evenly.

2). Tricolor cookies

Ingredients

Pre-sweetened cookie dough

Blue and red food color

Method

Divide the dough in three equal portions. Tint two portions of dough with red and blue color pastes and knead them well until the color spreads uniformly. Leave the third portion uncolored.

Harden the dough by chilling it. Then roll the two colored portions and cut a few large star shapes from them. Then make smaller sized star-shaped cutouts within these large stars, so you have a star within a star. Now make separate smaller sized cutouts from the two colored dough portions and fit them in the cutout of the larger stars with a contrast color pattern. Now make the smallest star-shaped cutouts within the inner star shape. Finally, cut the smallest size star shapes from the uncolored dough and fit it in this cutout. So what you have finally is, a blue-red-white or a red-blue-white star shaped raw cookie.

Baking should be allowed until the center wooden pick could be removed cleanly. Usually this takes 20-30 minutes. Take out the preparation from oven and place it on the wired wrack until it cools completely.

Use good and safe star-shaped quality cutters of three sizes to cut the various star shapes from the dough.

Fun competition idea

The kid who can eat 50 tricolor cup cakes or 50 tricolor cookies (since the US flag has 50 stars) gets a gift of US flag costume!! It does not matter if s/he does not eat anything else except the cup cakes or cookies!!
